Homemade, Healthier Peanut Butter Cups
If you use another nut butter, you may need to add more honey. Peanuts are naturally sweet. For that matter, this is definitely a “to your own taste” recipe! And you can easily adjust the sweeter to satisfy you.

soaked and dehydrated nuts

1-In a small bowl combine the peanut butter, coconut oil, vanilla, first two tablespoons honey, and nuts. Mix until well combined.

2-Drop by the heaping teaspoon into mini cupcake pans. Place in freezer.

3-Chop chocolate into small pieces and place in the top of a double broiler (or, like I do, in a heat proof bowl that fits on top of a pot you have). Mix in the honey. Bring about two inches of water to a boil in the pot and place the bowl on top. Watch the chocolate carefully so that it doesn’t burn, stirring gently while the chocolate melts. When there are just a few chunks left in the chocolate, take off of the heat and allow it to melt completely.

4-Drop by the teaspoon over the peanut butter mixture and place back into the freezer. Freeze for 20 minutes. Take out, and using a butter knife pop them out. Keep in the freezer or refrigerator and enjoy!

*To toast the nuts, place in a dry pan over medium-high heat. Stir almost continually until they are starting to brown. Take off of the heat.

*I used only one tablespoon honey to sweet the chocolate, but we decided that it needed to be sweeter! So I have put two to four tablespoons, depending on how sweet you want it to be.

Rainy Days, Cafes, and Boutiques

It has been raining nonstop here today. Since the time I woke up this morning until now. I love rainy days so much, but they really aren't that great when you're trying to get pictures, especially when you have to juggle a camera in one hand and an umbrella in the other. But, on the bright side, while I was tromping around in crazy puddles all over camp trying to capture the day without getting too wet, I got to use my sweet friend's amazing zebra print umbrella. The fact that it was zebra print made me a happy girl. This evening I got a chance to run downtown and meet my amazing sister, niece, and friend for dinner at Cafe on Broadway. It was absolutely delicious! I had an apricot almond and chicken salad that was yummy yummy stuff! After eating, we went to this little boutique store across the street called Heather Hill to look around, and it totally made me want to go home, dust off my sewing machine, and start creating things. I actually treated myself by buying a new apron for my hopechest. It was an adorable one with the cutest pattern, and I was able to get a deal on it, so that pretty much made my day. The shop was full of the sweetest little girl dresses that would be so easy to make. I got so many great ideas. I can't wait till I get a chance to make up a few for Elsie and some of the other precious little girls that the Lord has blessed my life with. I so enjoyed my visit with the girls while they were here. It was such a blessing to get to spend some time with them even it was just for a short while.

The Highly Effective Woman

Anyone who knows me knows that I love schedules. I love pulling out my little pink notebook in the mornings and planning out the day or week ahead. I have come to realize though how easy it is for me to get caught up in trying to complete these list and schedules in my own strength and ability, and it results in disaster every time. In my own efforts, it may start out well, but eventually I wear myself out, I get discouraged when not everything gets accomplished, or I get frustrated when things don't go the way that I plan them. It's at times like these that I realize I have forgotten where the source of my strength to get anything accomplished at all rests. The purpose of my planning is to be a better steward of my time so that through that I might bring glory to God. It's through planning that I can better serve my Savior and those he has placed in my life. A resource that I have found to be very encouraging in my efforts to better serve Him with my time, is written by a Godly woman who loves the Lord by the name of Carolyn Mahaney. In her PDF on the Highly Effective Woman, Carolyn covers three important truths in time management and organization. -The Source of our Justification-The Source of our Ability-The Source of our MotivationI like to often pull up and read through the first part of this PDF reminding myself of these truths whenever I find myself being distracted by trying to accomplish my tasks for my own sake and not for God's glory.
